吃一口就爱上的奶香麻花,做法简单不费力,味道堪称“麻花之王”前两天我出了一期关于怎么炸麻花的 *** ,具体做的是酥香的小麻花,吃着咸香而且酥脆,味道非常棒,这两天在街上也有看到商贩卖奶香 *** 花的,我之前一直没有尝试过这种松软的 *** 花,一直觉得味道肯定和馒头一类的差不多,恰巧有粉丝朋友说奶香 *** 花很好吃,而且越吃越香,一定让我做一做试一下。
从网上搜了一些方子,做了一下改良,没想到最后成品的味道真是有惊艳到我,甜甜的奶香,像面包,但是比面包要软,外皮酥酥的,吃着一点也不腻,果然吃一口就会爱上。
奶香 *** 花(外酥里软超好吃)
所需食材:鸡蛋2个、牛奶200克、白砂糖70克、盐2克、蜂蜜10克、酵母粉6克、面粉500克、黄油50克
之一步:把常温鸡蛋、牛奶、白砂糖、食盐、蜂蜜、酵母粉搅拌在一起,搅匀,然后少量多次的添加面粉,一边倒一边搅拌,搅拌成面絮状之后,揉成一个面团就可以,不需要很光滑。
第二步:揉好面团之后,撕开一个口子,里面放入50克软化好的黄油,然后把黄油揉进面团里,一开始面团会非常的滑而且粘手,揉的时候借助刮板整理黏在案板上的面团,不一会面团就会越来越光滑而且不粘案板了,揉好之后整理形状密封好放到温暖的地方去发酵。
第三步:案板上适量的撒一些干粉,面团发好之后会变得特别黏,把面团取出来,表面再撒一些干粉防粘,按压排气,更好排的干净一些,排完气之后揉匀搓成长筒,下6个面剂。我家的锅不是很大,下了6个面剂,如果家里锅很大的话建议少下面剂,做成长长的麻花显得更好看一些。
第四步:把面剂搓成长条,两只手各捏住两端,朝反方向用力,然后提起来长条就自动缠绕在一起了,在接着反方向用力上劲儿,在提起,把收口的尾巴藏在洞洞里,这样麻花就做好了。
第五步:麻花的生胚做好之后盖上保鲜膜松弛20分钟。快饧好的时候就可以热油了,油温6成热中小火炸麻花,把麻花生胚放进油锅里,立马浮起来的时候油温刚刚好,浮起之后翻面,炸到两面金黄就可以控油出锅了。

首先在碗里面打入两颗笨鸡蛋,加入三克的酵母,20克的白砂糖,一勺蜂蜜,用筷子充分的给他讲。拌均匀,搅匀以后再加入200毫升的温牛奶,再次搅拌均匀,先放一边备用!
另外准备一个大碗,里面倒入500克的普通面粉,加入两克的食盐,增加面粉的筋 *** ,往里面加入五克的油条膨松剂,用筷子充分的给它搅拌均匀,再用我们刚才调好的牛奶水和面,边倒边搅拌,搅拌成面絮状,再往里面加入20克的黄油,这个时候下手给它揉成一个面团。
揉好以后直接放在揉面垫上,继续推拉 *** ,像洗衣服一样,一直把面团揉到表面,光滑有弹 *** 就可以了,再搓成长条,分成大小均匀的面积,面积的重量大概50克左右就可以。取一个面剂揉圆,再搓成长条,全部都做好之后,直接放在托盘里,盖上一层保鲜膜,防止风干。
取出之一个做好的 *** 。先把它搓成细长条,然后两头分别向反方向上劲,最后捏着两头提起来,自然就卷在一起了,最后把头塞在里面,这样我们一个麻花生坯就做好了。全部做好之后放在托盘里,表面刷上一层食用油,防止粘,带上保鲜膜,让它自然醒发两倍。大半个小时以后,玻璃倒油,油温烧至五成热。
麻花明显膨胀变大了,直接放在油锅里,这个时候转小火慢慢炸,火千万不要太大了,不然很容易炸糊,炸的时候一定要勤翻面,受热均匀,一直炸到表面金黄,控油捞出。
这样我们一道简单又好吃的手撕 *** 花就做好了,颜色金黄,看着就非常的 *** ,有食欲,而且特别的漂亮,表皮吃起来焦香酥脆,内里松软香甜,比面包还要好吃!
