5、再把香菇去蒂以后切香菇片,胡萝卜切丝,芹菜切段,再把切好的所有蔬菜放入锅中,烫十五秒捞出沥干水分备用。再撒上少许食盐、生抽,拌匀后备用


6、再把豆腐皮放在案板上,放上腌好的小黄鱼肉,调好的配菜,然后朝一头给它裹起来,两头给它折起来,最后收口的地方再擦上点蛋黄液,裹紧


7、平底锅控干后倒入少许食用油,放入黄鱼香菇卷,开中小火慢煎,煎至四面金黄就可以出锅了,再把黄鱼香菇卷切成小段,摆在盘中就可以开吃了

冷冻的黄鱼

1、自然解冻30分钟。上面的冰已经破裂,用手从腮部往下撕,顺带内脏会被去除,黄鱼稍微解冻的时候更好除去内脏,把去除内脏的黄鱼放清水内清洗3遍,然后把洗净的黄鱼放进笊篱内控水。

2、把控净水的黄鱼倒入盆子内,下面开始码味,大姜拍破放进黄鱼内,然后再加入花椒、拍破的大蒜,大葱拍破从中间破开加进去、再加入盐4克、料酒适量、胡椒粉半勺,用手把黄鱼拌匀,腌制20分钟,让盐充分的腌透黄鱼。

3、20分钟之后把腌制好的黄鱼拣出来,把黄鱼放进盛器内,加入适量的玉米淀粉拌匀,再加入少许的吉士粉,加吉士粉能增加成品的颜色,看着更漂亮,粉芡均匀的粘匀黄鱼即可,粉芡不宜太厚。

4、下面开始炸制,锅上火加油,6成油温,把黄鱼一个个的下锅,下锅的时候要均匀的分开下,防止黄鱼粘连,大概20秒之后在黄鱼外皮定型的时候,用笊篱轻轻的翻动下黄鱼,不让黄鱼粘连。

5、中间要用勺子翻动下黄鱼 .让受热均匀,6-7成油温【210左右】,油炸黄鱼时间是2-3分钟左右,鱼表面气泡非常少,然后用笊篱捞出控油,在笊篱内撒上椒盐和孜然粉【不喜欢孜然的可以不放 】,均匀的摆放在盘子上即可。

*** 小贴士:

1、黄鱼要提前码味,腌制20中以上更入味。

2、拍粉用的吉士粉,非必要添加,没有可以不用。

3、炸制油温要控制好,油温太高会炸胡,油温低了会造成脱粉的情况。

4、按照这个 *** ,把鱼炸的再干一点可以炖鱼汤,味道也非常鲜美。

5、如果是商业做法,黄鱼炸熟就可以捞出备用,上桌之前再进行2次重油
