1、酱油炒饭是一道家常主食炒饭,主要食材是米饭(冷饭更佳),配以肉粒、鸡蛋、葱花和酱油等炒至熟热。

【酱油炒饭】

1.这是昨天没有吃完的米饭,做酱油炒饭更好用这种隔夜的冷饭,水汽已经基本晾干了,这样炒的时候不会粘成一团。

2.在米饭中打入两个鸡蛋黄,蛋清单独放在盆中,另外打入一个鸡蛋备用,把米饭和鸡蛋黄掺匀,尽量让米饭裹匀鸡蛋黄,这样炒出来才会更加的金黄漂亮,再准备一根火腿,切成小丁和米饭放在一起。然后把刚刚准备好的鸡蛋液,用筷子搅匀备用。

3.食材全部准备好以后,我们开始烹饪,锅内烧油,充分滑锅以后,倒出热油加入凉油,把鸡蛋液倒入锅中,快速打散炒熟,倒入米饭一起翻炒,炒出里面的水分,保持小火炒3分钟左右,把米饭炒干、炒香,像这样 *** 在锅中跳动,有吱吱的响声就可以了,如果喜欢吃焦一点的,可以再煎一会,会有锅巴的味道,吃起来更加焦香。
