在我们的生活中,馄饨一直是一种别样的存在。不管是微凉的早晨当早餐,还是中午点外卖,亦或是当夜宵,馄饨都能满足你的味蕾。没有什么是一碗馄饨解决不了的,如果有,那就两碗!今天小易来分享自制馄饨的详细做法,从调馅儿到擀皮子,超详细的做法解析,快收了!

所需食材:

猪前腿肉、葱姜水、生抽、白糖、蚝油、鸡精、盐、白胡椒粉、香油、高筋面粉 *** 克、鸡蛋1个(约45克)、室温水80克、食用碱半克、玉米淀粉、葱、猪油、秘制料、紫菜

*** 步骤:

之一步:预先用葱、姜、花椒,再加点热水,泡一个葱姜花椒水放凉备用。

第二步:猪前腿肉清洗干净后切成小块,再剁碎,放入大碗中;然后往肉末中加入一勺生抽、白糖、蚝油和小半勺鸡精,并搅拌均匀。

第三步:把葱姜花椒水分次加进肉末中,每加一次都要充分搅拌至肉末把水分完全吸收了,再加下一次;直到把一小碗葱姜花椒水都加进去,肉末最后的状态是细腻、弹弹的状态;然后再加入适量盐、胡椒粉去腥,拌匀后再加入少许香油,再次搅拌均匀后把肉末放在一边备用。

第四步:和面。大碗里准备半斤高筋面粉,打入一个鸡蛋(45克左右),搅散后用约80克的室温水和面。把水少量多次地加入到面粉中,边加水边搅拌;接着把小半克食用碱用水调开,加入到面粉中并充分揉匀,此时得到一个偏干的面团;然后盖上保鲜膜让面团松弛5分钟,再下手揉至面团光滑。

第五步:在案板上撒适量玉米淀粉,这样能够很好地防止皮子粘连;接着用擀面杖把面团压开,压成长方形,再卷起来,边推边擀,把皮子擀大擀长;擀好后换个角度继续擀,直到皮子明显变大。

第六步:用擀面杖把皮子卷起,再把皮子叠好,接着用擀面杖稍微压一压,把皮子发开,并把厚的地方再次擀开;然后再次把皮子卷起,卷好后抽出擀面杖,让皮子成桶状。

第七步:用擀面杖把皮子的正反面都压好、发开,再把皮子边缘比较厚的地方再次擀开。

第八步:在皮子的表面撒上少许玉米淀粉防粘,然后把皮子叠好,切成馄饨皮子大小;摊开再切成块,皮薄如纸的馄饨皮就做好了。

第九步:在皮子上放上调好的肉馅儿,顺着捏好(可以按照自己的喜好,想怎么包就怎么包),一个个小馄饨就做好了。

第十步:锅中加水烧开,把包好的馄饨下入锅中,水开后再点两次水,馄饨浮起,且皮子变得透明就是熟了。

第十一步:调汤。碗中加入少许葱花、猪油、生抽、鸡精、盐、秘制料和少许紫菜,然后舀入适量馄饨汤,汤就调好了;更好把煮好的馄饨盛入碗中,美味即成(直接使用高汤更好了)。
