真的不是我吹牛的,上周烤的一批曲奇饼干,一出炉就被工作室的小伙伴们瓜分�?/p>
红茶柠檬饼干/抹茶杏仁饼干
这两款曲奇饼干不需要挤花,基本上就是按照配方把材料混合均匀,整成长条形或圆形,冷冻定型再切,所以对于烘焙新手, *** 作起来还是挺简单的�?/p>
不同于挤花类的曲奇,黄油和低粉的比例差不多要1�?,这两款的黄油量非常合适,口感不油腻,甜度刚刚好,加入的蛋黄,整个口感更加的酥更加的细腻,再加上材料的搭配,真的是恰到好处�?/p>
红茶柠檬曲奇饼干,这款饼干不会甜到腻,反而是清清爽爽,吃起来浓郁的红茶味夹着清新的柠檬香气,特别让人回味�?/p>
抹茶杏仁饼干,一定要选择一款好一点的抹茶粉,才能体现出它的风味。翠绿的颜色夹着满满的杏仁片,吃起来酥酥松松的,有着淡淡的茶清香让人回味,而杏仁片伴随着抹茶越吃越香,可以让人一块接着一块停不下来�?/p>
· *** 材料 ·
红茶柠檬饼干:黄�?0�?糖粉40�?/p>
蛋黄1个(�?6克) 低粉145�?/p>
柠檬皮碎3�?红茶�?个(4~6克)
抹茶杏仁饼干:黄�?5�?糖粉35�?/p>
海盐0.5�?蛋黄1�?/p>
低粉120�?抹茶�?�?杏仁�?0�?/p>

1、 *** 红茶柠檬饼�?/p>
黄油切小块,提前软化。软化到可以用手指轻轻按下去~
2、加入糖粉拌均匀,可以用刮刀也可以用手动打蛋器,不需要过度打发的
3、加入常温的蛋黄,搅拌均匀。如果加入的是全蛋液,饼干的口感是酥脆的,只加入蛋黄,口感更偏向酥松�?/p>
4、加入柠檬皮碎和红茶包,搅拌均匀�?/p>
注意,柠檬皮碎不要切到白色的皮,不然口感会带一点苦�?/p>
5、筛入低粉,翻拌至看不见干粉
戴上手套,直接整成团,不需要过度揉�?/p>
6、可以把面团放入饼干模具整形,如果没有模具,也可以像我一样,利用刮板整成长条形,或滚成圆柱形
包上保鲜膜,放入冰箱冷冻大约1小时,变硬以后再切。红茶柠檬口味的,建议大家冷冻过夜,更加有风味�?/p>
7、取出冷冻好的面团,切成厚度0.5厘米的片状,如果饼干面团冷冻太硬的话,不要马上切,容易断裂,可以室温稍微回一下温再切
8、放入预热好的烤箱,160度,烘烤18-20分钟,表面微微上色就可以�?/p>
9、抹茶杏仁饼干做法是一样的
软化的黄油先加入糖粉盐搅拌均匀,再加入蛋黄搅拌均匀�?/p>
然后筛入低粉抹茶粉,加入杏仁�?/p>
翻拌至看不见干粉,戴上手套整成团
利用模具或刮板整形,盖上保鲜膜,冷冻变硬
10、冷冻好的饼干面团,切成厚度0.5厘米一�?/p>
放入提前预热好的烤箱�?50度,烘烤18-20分钟,抹茶味的曲奇饼干不能用太高温度烘烤,会影响抹茶的颜�?/p>
快出炉的时候,饼干散发出 *** 的香气,就是特别幸福甜蜜的感觉�?/p>
两款饼干的口味各有千秋,都是属于那种清新带着回味的口感�?/p>
酥酥松松的,入口细腻,慢慢化开带出了余香,真的巨好吃,大家一定要学起来啦�?/p>
