小馄饨,不管什么时候都能给味蕾更大的满足,可做早餐也可做夜宵;即使再疲惫,吃上一碗飘着辣油的小馄饨,可以瞬间治愈疲惫的身体。通体清透、口感嫩滑的小馄饨,一口下去,皮薄爽滑筋道,肉馅鲜香四溢……今天小易和大家来分享小馄饨的家常做法,从皮子到馅儿,超详细的 *** 过程哦!
所需食材:
中筋面粉400克、盐2克、蛋清2个(57克)、室温水约135克、肉末、盐、胡椒粉、生抽、蚝油、料酒、白糖、葱姜水、老抽、香油、生粉
*** 步骤:
之一步:400克面粉倒在案板上,再用手背在中间开个窝;接着加入2克食用盐和57克蛋清,稍加搅合后少量多次地加入清水,边加边搅合,把面粉抓成絮状再揉成团,得到一个偏硬的面团;然后把面团按压并对折,再次揉匀后包上保鲜袋松弛一会儿。
第二步:取出松弛好的面团,轻松几下就能揉匀了;然后再次包上保鲜膜,继续松弛。
第三步:准备好的肉末放入大碗中,再加入适量盐和胡椒粉去腥,用筷子搅拌均匀;接着加入适量生抽、蚝油、料酒、白糖并搅拌均匀;然后把准备好的葱姜水分3次加进来(每次都要搅拌至肉末把水分都完全吸收了再加下一次水),搅匀后再淋入少许老抽上色;最后淋入少许香油并拌匀。
第四步:在案板上撒上适量生粉(也可以是玉米淀粉、小麦淀粉),再取出松弛好的面团,用擀面杖压开、再擀成长方形;接着用擀面杖把面皮卷起,再次边推、边卷、边擀开;都做好后,轻轻抽出擀面杖。
第五步:把面皮折叠好,用擀面杖稍加按压,然后再次把面皮分开,边分开边擀,记得要撒上干粉防粘哦!边推边转着擀,把面皮擀到合适的厚度即可。
第六步:切去皮子边缘不整齐的部分,再轻轻抽出擀面杖,切掉皮子的两头;然后把面皮切成馄饨皮的宽度,,切好后把小卷发开,切成正方形的馄饨皮子即可。
第七步:用筷子挑起适量肉馅儿放到皮子上,顺手捏合,一个个小馄饨就包好了。

买了几次馄饨,也将她包馄饨的技术学到了家。可是这样包的馄饨吃起来并不是最理想的口感,哪怕皮再薄,馄饨皮粘连在一起,吃起来总有种粘牙感。

前不久刷到一段包馄饨的 *** ,看完 *** 便学到了另一种包馄饨的 *** ,当时 *** 上也没说这样包馄饨皮不粘牙,只是觉得跟我曾经的包法不一样。
前两天得以尝试,没想到这种包法才是我想要的那种馄饨的口感。自从包了这样的馄饨,家人再也不愿意吃传统的包法了。
顺变将做馄饨的过程也分享出来吧,先说调馅儿,我喜欢用虾仁加五花肉末,这样的馅吃起来比较鲜嫩。你也可以虾仁的量大一些。先将虾仁和肉馅放一起剁成泥,也可以加些葱一起剁。加工完放碗里备用。

加点料酒、胡椒、少许生抽、盐、鸡精、香油,用筷子顺着一个方向搅至吸收,接着加入适量的凉开水,也是按照一个方向搅拌,这样馅儿就没有那么稠了,然后再加入适量的凉开水,仍顺着一个方向搅拌,搅至水完全被吸收,盖上保鲜膜先放冰箱冷藏一会儿。

接下来准备包馄饨,这一步很关键。买馄饨皮的时候尽量挑选薄一些的,将皮里放一点馅料(顺手用筷子上的湿度抹在馄饨皮的四周,这样更容易包)之一步先两个对角对折,然后再将剩下的两个角折上就可以了,也可以了用食指和拇指同时握一下也行,不要太用力捏太紧就行,因为馄饨煮的时间短,不用担心它的馅会跑出来。如果捏的太紧的话,它的皮吃起来还会有粘牙感的。就像我配图的样子就可以了。

想要更完美或者是家里的小宝宝吃的,还可以更精致一些,就是将馄饨皮从中间切成四份儿,这样包出来的馄饨特别小巧可爱,吃起来鲜嫩爽口,口感绝对翻两倍,真的没有一丁点的粘牙感。

接下来就是备汤料了,我今天是煮了几根平时踢下来鸡腿骨,也算是小高汤了,比清汤会更好喝,煮骨头汤的时候今天我只加了胡椒,汤颜色看着还不错。在煮汤的时间可以准备放入汤里的配料。

香菜、紫菜适量,一点点鸡精,这些直接放入碗中备用就可以了。另外还泡了几粒海菜,煮馄饨时候提前放入稍微一煮就行。

一切准备就绪,可以下馄饨了,先把泡好的海菜搁进去,水开后下馄饨,馄饨不要一个一个跟下饺子一样下,要同时下进去,不然熟的不均匀。馄饨皮薄不能煮的太久,锅开一会儿馄饨飘起来就可以了,不然也会影响口感。

馄饨出锅了,直接盛在放紫菜香菜的碗里就行,卖相还可以吧?一看就是自己家里做的,外边卖的是汤多馄饨少,自己家里做的是汤少馄饨多,还是家里的更实惠吧,不过也不能汤太少,那样也影响整个馄饨的口感。
