说起鱼汤,那可是很多人公认的营养美食,奶白的汤汁味道鲜美,光看着都忍不住想要喝上一大碗,可是很多人做出来的鱼汤一点也不浓白,想知道是什么原因吗?那就来看看小易的分享吧!
所需食材:
花鲢鱼、大葱、生姜、盐、啤酒、花雕酒、干花椒、白糖、胡椒粉、香油
*** 步骤:
之一步:花鲢清洗干净后从鱼尾处下刀,片下鱼肉,在鱼的后脑勺处切断;然后片下鱼肚上的大刺,再把鱼肉、鱼骨剁成大块,鱼头对半劈开,并在鱼肉上划两刀以方便入味。
第二步:把切好的鱼头和鱼骨放在大盆中,并 *** 葱姜水。然后把葱姜水倒入大盆中,再加入足量盐和啤酒,抓拌均匀后腌制10分钟。
第三步:大葱切成段,生姜切成片,大蒜切成厚片。然后往腌制好的鱼头鱼骨中加入清水,并多次抓洗,充分抓洗干净,最后捞出来控干水分。
第四步:把锅充分烧热后加入一勺油,转动锅子让锅的四壁都粘上油,油充分烧热后,把热油倒出去,再往锅中加入一勺冷油;油热后把鱼头下入锅中,煎至定型后晃动锅,防止鱼皮粘锅,把鱼头一面煎至金黄后翻面,煎至两面金黄后盛出;用同样的 *** 把剩下的鱼骨都煎好。
第五步:把锅充分烧热后加入少许油,然后下入姜片、葱段和大蒜,再加入几粒干花椒去腥,稍加煸炒后把煎好的鱼头、鱼骨下入锅中;往锅中加入适量花雕酒,再加入开水,大火烧开后打去浮沫(如果鱼比较大,可以分两锅 *** 作, *** 一样)。
第六步:往锅中加入少许白糖提鲜,再根据个人口味加入适量食盐和胡椒粉,大火炖煮15分钟左右,最后挑出鱼汤中的大葱和姜片,撒入少许葱花后再淋入少许香油,美味即成!
*** 关键点:
1.鱼肚子中的黑膜一定要清洗干净,鱼腥味很重;鱼头鱼骨洗干净后请把水分完全沥干,这样煎制的时候才不会粘锅
2.煎制鱼头和鱼骨这一步很重要,做好了能够很好地去除腥味。
3.炖汤的时候请用开水下锅,这样炖出来的鱼汤才会浓白。

鲜浓奶白鲫鱼汤
准备材料:
鲫鱼、鸡蛋、盐、姜片、油
材料
做法:
1. 将鲫鱼去除鳞、鳃和内脏,并在鲫鱼的两边用刀划上几个口子,去内脏的时候要注意不要弄破胆,以免影响总体的口感。

2. 锅中倒入少许油,打入鸡蛋,煎成荷包蛋样子备用。

3. 在鲫鱼的身上撒上一些盐,涂抹下(这样是为了一会下锅煎不粘锅)。

4. 起锅烧油,油微热时放入鲫鱼。

5. 煎至二面金黄,如下图所示,就可以关火了。

6. 将煎好的鱼放入砂锅中,加入一些姜片。

7. 倒入热水。(注意一定要是热水)

8. 大火烧开后转小火,继续煮30分钟。

9. 时间到后,加入备用的荷包蛋,再继续小火煮20分钟。最后加盐和胡椒粉即可。

此汤小结:
- 鲫鱼一定要是鲜活的,可以的话,可以买回来自己杀。只有鲜活的鱼做出的汤汁不加鸡精也会比较鲜美。
- 加入荷包蛋的目的是,是汤色更为浓稠,同时增加汤汁的鲜美和营养。
- 煎荷包蛋不太会的朋友,可以等油温热时就打入鸡蛋,同时火要调小,这样比较容易 *** 作。
- 调味可以根据自己的喜好增加减,可以撒上葱花或者香菜都是比较好的。
